What you'll need

  • 640 g puffed rice
  • 1 teaspoon garlic powder
  • 1 teaspoon curry powder
  • 1 teaspoon chilli powder
  • ½ teaspoon fine sea salt
  • 4 baby potatoes, cooked, cooled, dried and chopped
  • 2 tomatoes, seeded and chopped
  • 1 small red onion , finely chopped
  • 1 fresh green chilli, seeded and finely chopped
  • 1 tablespoon brown sauce
  • 1 tablespoon mint chutney (see our mint chutney recipe on website)
  • 1 tablespoon fresh lemon juice, from ½ a lemon
  • 3 tablespoons fresh coriander, roughly chopped, plus more for serving
  • 40 g pomegranate seeds, plus more for serving
  • Sprinkle of sev for a slight crunch, optional

Method:

 

  • Combine puffed rice and spices in a large mixing bowl until well combined. Add the vegetables, chutney, brown sauce, lemon juice, sev, if using, coriander, and pomegranate seeds and mix well.
  • Put in a large serving bowl. Top with extra sev, coriander, and pomegranate seeds.
