Bombay Hasselback Potatoes

What you'll need

  • 6 roasting potatoes , scrubbed
  • 120 ml olive oil
  • 1 tablespoon garam masala
  • 1 ½ teaspoons chilli powder
  • 1 ½ teaspoons ground cumin
  • 1 ½ teaspoons onion granules
  • 1 ½ teaspoons garlic powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground turmeric
  • 1 teaspoon fine salt
  • Coarse sea salt , for serving
  • Chopped fresh coriander , for serving

Method:

 

  • Preheat oven to 200°c. Put an oven rack in a rimmed baking tray.
  • Place the potatoes on a chopping board, the flattest side down. Using a sharp knife, cut slices about 2mm think, being careful to only cut about ¾ of the way through the potato.
    Combine the olive oil with the spices and salt in a small bowl. Brush the oil mixture all over the potatoes, making sure to brush the cut slices on both sides. Place on the rack and cook for 50 – 60 minutes or until the potatoes are tender and browned.
  • Sprinkle with coarse sea salt and coriander before serving.
