Buffalo Popcorn

What you'll need

  • 2 tablespoons vegetable oil
  • 100 g popcorn kernels
  • 60 g vegan butter
  • 100 g brown sugar
  • 60 ml agave nectar
  • ½ teaspoon salt
  • 60 ml buffalo sauce
  • ½ teaspoon cayenne pepper
  • ½ teaspoon bicarbonate of soda

Method:

 

  • Heat the oil in a heavy pan and add the popcorn. Cover the pot and wait for the kernels to pop. Shake pot occasionally and wait for the kernels to stop popping.
  • Line two baking trays with foil and preheat the oven to 120°c. Divide the popped corn between the two baking trays.
  • Melt vegan butter, brown sugar, agave nectar, and salt in a small pan and bring to a boil, stirring constantly. Once boiling, let boil for 5 minutes without stirring. Stir in the buffalo sauce and boil for another 2 minutes.
  • Remove from heat and stir in the cayenne pepper and bicarbonate of soda. Divide the sauce evenly among the two trays of popcorn. Stir to coat.
  • Bake for 1 hour, stirring every 15 minutes.
