Cobb Egg Salad

What you'll need

  • 3 tablespoons mayonnaise
  • 3 tablespoons Greek yoghurt , or dairy free alternative
  • 2 tablespoons red wine vinegar
  • Fine sea salt
  • Freshly cracked black pepper
  • 8 hard boiled eggs , cut into bite sized pieces
  • 8 strips streaky bacon cooked and crumbled
  • 450 g cherry tomatoes , cut in half
  • 115 g crumbled blue cheese , or dairy free alternative
  • 2 tablespoons chopped fresh chives , plus more for garnish
  • 1 avocado , sliced

Method:

 

  • Combine mayonnaise, yoghurt, vinegar, and a pinch of salt and pepper in a small bowl. Set aside.
  • To a serving bowl, add the eggs, bacon, tomatoes, blue cheese, and 2 tablespoons chives. Add most of the dressing and gently toss together. Taste and season with more salt and pepper if needed. Add the avocado, saving a few slices to garnish and give another gentle toss. Drizzle with remaining dressing and garnish with chives.
