Vegan Corn & 'Feta' Salad

What you'll need

  • 2 tablespoons extra virgin olive oil
  • 4 average sized corn on the cob, husks and silk removed, corn cut from the cob (about 480g)
  • 1 jalapeno pepper , seeded and diced
  • 10 g fresh coriander or parsley , chopped
  • 40 g red onion , finely chopped
  • 85 g feta alternative , crumbled
  • 2 tablespoons vegan mayonnaise
  • 2 tablespoons fresh lime juice , 1 lime, juiced
  • 1 tablespoons honey
  • 1 garlic clove , finely grated
  • Fine sea salt , to taste
  • Freshly ground pepper , to taste

Method:

 

  • Heat the olive oil in a large pan over medium-high heat. Add the corn and cook, stirring occasionally, until brown in spots, about 7-10 minutes. Transfer to a large bowl and set aside to cool for 5-10 minutes.
  • Add the jalapeño, coriander, onion, and most of the cheese (reserve a bit for garnish) to the bowl.
  • In a separate bowl, whisk together the mayonnaise, lime juice, honey, and garlic. Add to the salad and toss gently to combine. Season to taste with salt and pepper. Top with remaining cheese and serve.
