Cucumber Feta Mint Rolls

What you'll need

  • 115 g feta cheese , crumbled
  • 15-20 fresh mint leaves , finely chopped
  • 1 small clove garlic , finely minced
  • 2 teaspoons olive oil
  • ¼ teaspoon fine sea salt
  • 1 medium cucumber , sliced lengthwise into 8-10 slices, about ⅛-inch thick (a mandoline works best for this)
  • 1 tablespoon fresh chives , finely chopped

Method:

 

  • In a small bowl, combine feta, mint, garlic, olive oil, and salt until well combined and fairly smooth.
  • Lay out the cucumber ribbons and spread about 2 teaspoons of the feta and mint mixture down the center of each cucumber slice. Carefully roll the cucumber slice all the way and then secure with a small skewer or toothpick. Repeat with each cucumber slice. Garnish with chives.
