What you'll need

  • 1 mashed banana
  • 60 ml milk, or dairy free alternative
  • 2 tablespoons cocoa powder
  • 2 tablespoons sugar
  • 3 slices gluten-free bread
  • 1 tablespoons butter, or light oil spray
  • A sprinkle of ground cinnamon
  • 2 tablespoons chocolate chips, for topping
  • 2 tablespoons maple syrup, for topping
  • 2 tablespoons chocolate sauce, for topping

Method:

  • Combine mashed banana and milk in one bowl. Add cocoa powder and sugar. Mix and set aside.
  • Dip each slice of the bread into liquid mixture, flipping over and coating each side evenly.
  • Spray or add butter to a frying pan on medium heat. Once the pan is coated evenly, add the dipped bread.
  • Cook for approximately 3 minutes on each side. When you flip, the slices should be browned and crispy. If the bread is not browned, you have flipped too early, and the French toast will need more time. When you flip the bread over, make sure to add a sprinkle of ground cinnamon to the newly exposed side.
  • Once both sides are browned and crisp, transfer to a plate.
  • Top with chocolate chips immediately so they melt. Serve with maple and/or chocolate sauce of choice.
