Goan Prawn Curry

What you'll need

  • 2 tablespoons coconut oil
  • 1 medium red onion , finely diced
  • 3 cloves garlic , grated
  • 1- inch piece of ginger , peeled and grated
  • 230 g tomato puree
  • 1 tablespoon curry powder
  • teaspoons paprika
  • ¾ teaspoon fine sea salt
  • ½ teaspoon cayenne pepper
  • 355 ml coconut milk
  • 1 teaspoon tamarind concentrate
  • 450 g large prawns , peeled and deveined
  • Cooked basmati rice , for serving

Method:

 

  • Heat the coconut oil in a large pan over medium-high heat. Add the onion and fry until it is tender and translucent, about 3-4 minutes.
  • Stir in the grated garlic and ginger and cook until fragrant, about 30 seconds.
  • Add the tomato puree, then stir in the curry powder, paprika, salt, and cayenne pepper. Cook until the mixture starts to thicken, about 2-3 minutes.
  • Pour the coconut milk and tamarind concentrate into the pan and stir well. Bring the sauce to a gentle simmer, then add the prawns. Cook until the prawns are opaque and cooked through, about 4-5 minutes.
  • Serve over rice.
