What you'll need

  • Nonstick cooking spray
  • 450 g Italian sausage
  • 1 medium onion
  • 10 large eggs
  • 240 ml milk, or dairy free alternative
  • 2 teaspoons Dijon mustard
  • 1 teaspoon fine sea salt
  • ½ teaspoon freshly ground back pepper
  • 560 g hash browns, defrosted
  • 220 g cheddar cheese, grated, divided
  • 1 red pepper, seeded, deveined and diced
  • 1 green pepper, seeded, deveined and diced

Method:

 

  • Preheat the oven to180°c. Spray a 9×12-inch baking dish with cooking spray.
  • Remove the sausage from the casings and crumble into a large pan. Add the onion and cook over medium heat until the sausage is no longer pink, and the onions are translucent, about 8 minutes. Drain.
  • Whisk together the eggs, milk, mustard, salt, and pepper. Add the sausage, hash browns, and half the grated cheese. Pour into the prepared baking dish. Top with the remaining cheese and the diced peppers. Bake, uncovered, for 45-55 minutes or until the centre is just set. Let cool for 10 minutes before serving.
