Kale-Apple Salad with Warm Bacon Dressing

What you'll need

  • 225 g fresh kale , stemmed and chopped
  • 1 medium red apple , cored and thinly sliced
  • 2 stalks celery with leaves , thinly sliced
  • ½ small red onion , thinly sliced
  • 4 pieces thick-sliced bacon , chopped (about 225 grams)
  • 2 tablespoons lemon juice , from 1 lemon
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon pure maple syrup
  • ½ teaspoon Dijon mustard
  • Fine sea salt , to taste
  • Freshly ground black pepper , to taste

Method:

 

  • Combine kale, apple, celery, and onion in a bowl; set aside.
  • Cook bacon in a nonstick pan over medium heat until crispy; transfer to a paper towel to drain.
  • Whisk lemon juice, vinegar, maple syrup, and mustard into the bacon fat until slightly thickened and creamy; remove from heat. Season with salt and pepper, to taste. Immediately pour over salad and toss to coat.
  • Crumble the bacon onto the salad. Serve immediately.
