What you'll need

  • 6 lemons , washed
  • 3 red chillies
  • 6 tablespoons olive oil
  • 3 tablespoons mustard seeds
  • 1 tablespoon cumin seeds
  • 9 tablespoons sugar
  • ½ teaspoon fine sea salt

Method:

 

  • Chop the lemons and remove any seeds. Deseed the chillies and finely slice.
  • In a small pan, heat the oil over a low heat, add the mustard and cumin seeds and fry until they start to pop. Add the lemons, chilli, sugar, and salt. Cook over a medium heat until thickened, sticky and the lemons are softened, about 10 minutes.
  • Place in a clean jar and store in the fridge for up to a week.
