Mashed Potato Pancakes

What you'll need

  • 420 g mashed potatoes
  • 1 large egg
  • 30 g gluten-free plain flour
  • 2 teaspoons chopped chives , plus more for serving
  • Fine sea salt , to taste
  • Freshly ground black pepper , to taste
  • 2 tablespoons vegetable oil
  • Sour cream for serving , or dairy free alternative

Method:

 

  • Combine the potatoes, egg, flour, and chives and mix well. Taste and add salt and pepper, if needed. Form into patties, using about 50g per patty.
  • Heat oil in a large pan over medium heat. Fry the pancakes about 2 minutes per side or until golden brown and warm.
  • Serve, topped with sour cream and chives, if desired.
