Melon, Ham & Burrata Salad

What you'll need

  • 1 teaspoon chilli flakes
  • 1 honeydew melon
  • 60 g ham, thinly sliced
  • 115 g burrata or fresh mozzarella cheese (or dairy free alternative)
  • ¼ teaspoon cracked black pepper
  • 2-3 tablespoons French style vinaigrette
  • Optional garnish: thinly sliced fresh basil

Method:

 

  • Place chilli flakes in a small dry pan over medium heat. Toast for 90 seconds, stirring frequently. Remove pan from heat and let cool.
  • Cut melon in half lengthwise, remove and discard seeds, and quarter lengthwise. Remove the peel. Shave the melon into strips using a vegetable peeler. Arrange melon strips and ham slices on a platter. Crumble the burrata evenly over top and sprinkle with toasted chilli flakes and cracked black pepper. Drizzle vinaigrette over top. If using, garnish with fresh basil right before serving.
