Peanut Free Spicy Thai Chicken Salad Mason Jars

What you'll need

  • 60 g WowButter
  • 2 tablespoons tamari or gluten free soy sauce
  • 1 ½ tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon chilli garlic sauce
  • Juice of 1 lime
  • 100 g shredded cabbage
  • 130 g shredded carrot
  • 75 g peppers, sliced
  • 155 g edamame beans
  • 140 g shredded cooked chicken
  • 2 tablespoons coriander leaves
  • Pumpkin seeds , optional

Method:

 

  • Combine the Wowbutter, tamari, vinegar, honey, chilli garlic sauce, and lime juice and whisk until smooth. Divide evenly among two Mason jars.
  • Add the remining ingredients in layers in the order given. Screw on the lid of the jar.
  • Refrigerate for up to 5 days. When ready to eat, shake the jar and pour into a bowl or eat out of the jar.
