Prawn & Chorizo Skewers

What you'll need

  • 1 tablespoon olive oil, plus more for greasing
  • 2 teaspoons fresh lemon juice , from around 1/2 lemon
  • 1 teaspoon Old Bay seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • 450 g large prawns, peeled and deveined
  • 1 pepper , cut into 1-inch pieces
  • 1 large onion , cut into 1-inch pieces
  • 340 g chorizo, sliced into ½-inch thick pieces
  • 175 g cherry tomatoes

Method:

 

  • Combine the olive oil, lemon juice, Old Bay seasoning, garlic powder, sea salt, and pepper together in a large mixing bowl. Add the prawns and toss until well coated. Cover the bowl and refrigerate for 30 minutes.
  • Thread alternating pieces of pepper, onion, prawn, and chorizo onto skewers. Top each skewer with 1-2 cherry tomatoes.
  • Preheat the grill to medium-high heat and lightly oil the grate. Grill the skewers for about 8-10 minutes, turning once, until the vegetables are tender and the prawns are cooked through.
  • *remember to soak skewers for at least 30 minutes before cooking*
