Strawberry Basil Baked Brie

What you'll need

  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 240 g strawberries , thinly sliced
  • Fresh basil , cut into thin ribbons
  • ½ teaspoon fine sea salt
  • 1 whole round brie, or 9 minis
  • 80 g toasted almonds, optional

Method:

 

  • Preheat the oven to 190°c. In a medium sized bowl, mix together the balsamic vinegar and honey until just combined.
  • Add strawberries to the mixture and stir until all the strawberries are well coated. Put the mixture in the fridge for about 15-20 minutes to allow the flavours to combine.
  • Line a rimmed baking tray with parchment paper and place the cheese in the centre. Bake on the middle rack until the cheese feels very soft when pressed, about 15-17 minutes.
  • Add fresh basil, almonds, if using, and salt to the strawberry mixture. Top the hot brie with strawberry mixture and serve immediately with your favourite gluten-free toasted baguette slices, crackers, sliced apples, or sliced pears.
