Sweet Potato Peri Peri Wraps

What you'll need

  • 1 Good It's Gluten Free Wrap Kit
  • 2 medium sweet potatoes peeled and cut into matchsticks.
  • 3 tablespoons olive oil , divided
  • 70 g shredded kale
  • ½ teaspoon fine sea salt
  • 75 g crumbled dairy free feta
  • Pumpkin seeds , optional

Method:

 

  • Preheat the oven to 220°c. Coat the sweet potatoes with 2 tablespoons of olive oil and spice mix. Roast for 20 minutes or until they are tender and starting to brown.
    Combine kale, 1 tablespoon of olive oil and salt in a small mixing bowl and massage for a couple of minutes.
    Warm the wraps in the microwave for 30-45 seconds.
    Build the wraps by spreading a little sauce on each wrap, then topping with kale, sweet potatoes, cheese, and pumpkin seeds. Drizzle with more sauce.
    Serve!
