Sweetcorn Pakoras

What you'll need

  • 400 g gram flour
  • 90 g rice flour
  • 1 tablespoon salt
  • 2 teaspoons garam masala
  • 1 teaspoon chilli powder
  • 1 teaspoon ground cumin
  • 1 teaspoon baking powder
  • ½ teaspoon turmeric
  • 590-700 ml hot water
  • 310 g sweetcorn
  • 1 red pepper , finely diced
  • 1 small red onion , finely diced
  • 1 jalapeno pepper , finely diced
  • Vegetable oil

Method:

 

  • Combine the flours, spices, salt, and baking powder in a mixing bowl.
    Starting with 590ml, add the water and mix. The batter should be thick but if it is too thick, add water, a little bit at a time.
  • Heat a dry pan over medium-high heat. Cook the corn for a few minutes to dry it out but not brown it. Add to the batter along with the peppers and onion. Stir well.
  • Heat about ¼ inch of oil in a pan over medium heat until hot. Add the batter, 1 tablespoon at a time, depending on how thick you like them, and flatten. Cook for about 5 minutes per side or until golden brown and cooked through.
