What you'll need

  • 1 large watermelon
  • 240 ml vanilla yogurt , or dairy free alternative
  • 280 g mixed berries (blueberries, raspberries, and sliced strawberries)
  • 2 tablespoons coconut flakes
  • Mint leaves , for garnish (optional)

Method:

 

  • For the watermelon “crust,” cut a 1-2-inch thick round slice from the centre of a large seedless watermelon. You can easily make multiple pizzas by cutting multiple slices from the same melon.
  • Spread the yoghurt onto the watermelon, leaving a little pink watermelon flesh exposed as a border. Arrange berries on top in desired fashion. Sprinkle with coconut flakes. Garnish with mint leaves, if using. Cut into 8 wedges and serve immediately.
