Simple air fryer recipes

In the first edition of Free From Living, I discuss how air fryers can be a free fromer’s best friend. I also shared some of my favourite free from air fryer recipes. Here, I share a couple more that we couldn’t quite squeeze onto the pages! Monte Cristo Sandwich


The Monte Cristo is an American version of the croque monsieur, with a sweet twist.

Ingredients:

  • Gluten free bread of your choice
  • Sliced Swiss cheese
  • Smoked ham
  • Free range eggs
  • Whole milk
  • Sainsbury’s Raspberry Coulis, Taste the Difference 250g
  • Icing sugar


Method:

  • Cut four thick and even slices of bread (making sure they fit in your air fryer)
  • Whisk one egg and a splash of milk in a shallow bowl
  • Dredge one side of bread in the egg mix and place on a small piece of baking parchment
  • Layer slices of ham and cheese on the dredged bread
  • Dredge another slice of bread in the egg mix and place it on top
  • Cook for three minutes at 180c in the air fryer
  • Carefully remove the sandwich from the parchment and turn over
  • Cook for a further three minutes
  • Remove from the air fryer and lightly dust with icing sugar (optional)
  • Serve with a pot of raspberry coulis, for dipping

Chocolate Chip Cookie Dough

This cookie dough can be made in advance and kept in the freezer. Simply cut a slice from the dough and warm up in the air fryer when required for an indulgent, warming treat for one.


Ingredients:

  • 250g butter
  • 100g caster sugar
  • 100g soft brown sugar
  • 1 tsp vanilla extract
  • 300g plain gluten free flour
  • 100g dark chocolate chips
  • 100g white chocolate chips

Method:

  1. Place the butter and sugar in a microwavable bowl and warm gently, until the butter is soft
  2. Mix the softened butter and sugar until smooth
  3. Add all other ingredients and work together until well mixed
  4. Place a square piece of cling film on a clean worktop and turn out the dough onto it
  5. Roll the dough in to a log shape and freeze
  6. When required, cut a thumb width disk from the log and place in a small tapas dish
  7. Air fry for four minutes at 180c or until crisp round the edges
  8. Leave to cool for five minutes and serve with ice cream

Shakshuka


My version of this authentic, Middle Eastern egg-based dish can be made vegan and egg free. Enjoy as a
tasty breakfast or brunch. The recipe makes enough for two adult portions, but they’ll need to be cooked
separately.


Ingredients:

  • Tin of good quality chopped tomatoes
  • Jar of roasted red peppers
  • Tablespoon Ras El Hanout spice
  • Fresh red chilli (optional)
  • Coriander (optional)
  • Free range eggs
  • Feta cheese


Method:

  1. Remove peppers from the jar, drain and slice.
  2. Put peppers, chopped tomatoes and spice together in a bowl and mix well
  3. Place mixture in an ovenproof dish that fits in your air fryer, leaving a little space at the top
  4. Crumble feta on top, make a small well in the tomato mixture and crack an egg in to it
  5. Bake in the air fryer for eight mins at 180c or until the egg is cooked to your liking
  6. Garnish with chilli and coriander
  7. Replace egg and feta with squash and tofu for vegan version.
